Lassi

Lassi can be made in 3 variations. Sweet, Salty and Masala Lassi can be found in street side shops during summer. 

Making all types of lassi at home is very easy and quick. You can add mangoes to the lassi and make delicious, thick mango lassi during summer, dry-fruits lassi or saffron lassi to keep varieties.

Usualluy people like sweet version of lassi. Though there are people who prefer salty or masala lassi.
 

I personally like thick sweet lassi loaded with fresh cream on the top. 

We usually make lassi  using wooden churner. But you can combine the ingredients in a blender and make it within seconds. But lassi made with wooden churner tastes much different than made in a blender. 

Salted lassi is somewhat contrast to this sweet lassi. Black salt, cumin powder is used to make this lassi. But if you are unable to get black salt, simply use regular salt. You may think salted lassi and buttermilk are same, but they are not. Salted lassi has somewhat thick compared to buttermilk.

The third version is Masala lassi. It is made by adding green cardamom, nutmeg powder and black pepper to the thick yogurt. You can crush the cardamom and black pepper with mortar-pestle.

Lets learn how to make sweet lassi at home

Sweet Lassi


Ingredients

  • 2 cup thick and chilled yogurt
  • 1 cup water
  • 1/4 cup sugar or as per taste
  • 1 tsp cardamom powder
  • saffron strands
  • chopped dry fruits
  • Ice Cubes

 Recipe

  1. Whisk the curd with a wooden churner until smooth.
  2. Add sugar and cold water. Whisk till all gets well combined.
  3. You can adjust the water for thick and thin consistency.
  4. Keep on churning till sugar gets dissolved.  
  5. You can put all the ingredients in a blender and blend to a smooth consistency.
  6. Add cardamom powder, saffron strands. Mix well. 
  7. Pour the lassi in tall glasses, add ice cubes.
  8. Top it with fresh cream and chopped dry fruits.
  9. Serve sweet, chilled lassi right away.

Salted Lassi

 


Ingredients

  •  2 cup thick and chilled yogurt
  • 1 cup water
  • 1 tsp black salt or regular salt
  • 1 tsp roasted cumin powder
  • Ice Cubes

Recipe

  1. Combine all the ingredients in a big bowl except ice cubes.
  2. Churn till you get smooth lassi.
  3. Pour the salty lassi in tall glass. Add ice cubes. Serve immediately.

Masala Lassi

Ingredients

  • 2 cup thick and chilled yogurt
  • 1/2 cup water
  • 1/4 tsp black pepper, crushed
  • 1/2 tsp grated nutmeg
  • 1 tsp cardamom powder
  • saffron strands
  • chopped dry fruits
  • Ice Cubes
  • 1/4 cup jaggery

Recipe

  1. Combine all the above ingredietns in a blender except ice cubes.
  2. Blend till smooth and frothy.
  3. Adjust jaggery level as per the taste.
  4. Pour in tall glasses and serve immediately.

Tip - Lassi tastes best when served immediately. Try to consume it when it is fresh.

Serve sweet lassi loaded with fresh cream and nuts.

Serve salted lassi topped with mint leaves, coriander leaves and lightly roasted cumin powder, red chili powder.
