Kaju Katli

Kaju Katli is a favorite sweet of all ages of people. We can't just end in one bite. The creamy texture and the cashews flavor wont allow us to stop on just one. Isn't it?  

Buying Kaju Katli from store is not affordable all the time.  And why to buy from outside, if we can make the same taste, same texture at home that too with minimal ingredients.

Gift the home made Kaju Katli on this Diwali. Surprise your relatives, friends and family. Something different than usual.

Very simple to make. Yes it takes time to make. You can save the time by preparing the powder one day prior.

Lets learn how to make Kaju Katli at home. Try the sweet on this Diwali. 

Cooking Time: 90 Minutes 



  1. In blender, add cashews to the blender. Pulse to make a powder.
  2. Do not grind for a long time, do it with breaks. As it releases oil and turn lumpy.
  3.  Sieve the powder to avoid having any lumps.
  4. Repeat the grinding process for lumps and sieve the powder. 
  5. Powder should be grainy and not like flour.
  6. To save time, you can do this process one day ahead. Store the powder in an air tight jar and use the next day.
  7. Add milk powder to it and mix well.
  8. To make sugar syrup, heat a pan and add sugar and water. 
  9. Stir and dissolve the sugar in medium heat.
  10. Bring the syrup to a boil. We need two string consistency syrup. 
  11. Add cashew-milk powder mixture to the syrup and mix well. 
  12. Add in batches, else you will end up in having lumps.
  13. Stir contentiously on low to medium heat until the mixture begins to thicken.
  14. Add cardamom powder, ghee. Keep stirring.
  15. Continue stirring till the mixture start leaving the pan. If not, add 1 tsp ghee.
  16. In sometime, mixture will come together and start leaving from the pan from all the sides.
  17. To test if it is done, take 1/4 tsp mixture on hand and make a ball. Ball should be non-sticky. Then only it is done. 
  18. If not, you need to cook more. 
  19. Grease a plate and pour the mixture on it. When the mixture becomes slightly cool, start kneading. 
  20. Make the mixture a smooth dough.
  21. Wrap the dough in a plastic paper/butter paper and roll it  in 1/4 inch thickness.
  22. Let it cool completely and cut in diamond shape. 
  23. Vark or silver foil can be places on the top. 
  24. Store it in an air tight jar.
