Mutton Rogan Josh

These type of dishes we usually have in restaurants. But do we ever think of making them at home?

Typically it is made with onion, garlic and tomato gravy. But trust me rogan josh doesnt need any gravy. It can be made with just yogurt and spice powder. 

This recipe includes onion, garlic-ginger paste and is super easy. 

Let us learn how to make Mutton Rogan Josh in steps.

Cooking Time: 3 hours


  • 700 gms Mutton
  • 4 tbsp Oil
  • 2 Green Chillies (slit)
  • 1 tbsp Ginger Garlic Paste
  • 2-3 Black Pepper
  • 3-4 Cloves
  • 1 cup Water
  • 1 inch Cinnamon Stick
  • 1 tsp Cumin Seed Powder
  • 1 tsp Coriander Seed Powder
  • 1 tsp Garam Masala  
  • 1 tbsp Red Chilli Powder
  • 1/2 tsp Tumeric Powder
  • 1/2 cup Brown Onion Paste
  • Salt


  1. Add oil in the pan .
  2. When the oil is hot add 2 green chillies, cinnamon stick, black pepper, cloves, and ginger-garlic paste and stir a little bit. 
  3. Now add the mutton and fry for couple of m minutes.
  4. Stir and add a cup of water. 
  5. Add salt to taste and leave to simmer for five minutes 
  6. It's time to add masala. Start by adding brown onion paste, cumin seeds powder, coriander seed powder,garam masala, red chilli powder, and turmeric powder now do all this a nice mix 
  7. Cover the lid and let cook for 40 minutes. 
  8. Now Mutton Rogan Josh ready to serve.
