Veg Hot and Sour Soup

A hot bowl of soup during the winter or rainy season! This thought only made my mind try this wonderful and simple Indo-Chinese soup recipe. Many of us don't like this soup thing but trust me to sip a spoonful of this liquid during the season and you will end up finishing the whole bowl. It is a common soup most of us order as a starter. It is famous for its spiciness and sourness

Soup is not only spices and water but its a combination of water, spices, and vegetables. If you are a meat lover, you even can add meat into this. This will be a source of protein, vitamins, and fiber.

When you make this soup at home, be careful with the consistency. It should be too watery or too thick. Keep an eye on the measurement of corn starch when adding. Veggies should be sliced thinly or diced very small as we don't cook them just saute in oil. So they need not be raw.

Cooking Time: 30 minutes
Servings: 2

Ingredients
  • 1 Carrot, finely chopped
  • 2 tsp spring onion, finely chopped
  • 2 tsp corn kernels
  • 1/4 cup french beans, finely chopped
  • 1/4 cup capsicum, finely diced
  • 1 small onion, finely diced
  • 3/4 cup mushrooms, finely sliced
  • 1 tsp ginger, finely chopped
  • 3 - 4 tsp garlic, finely chopped
  • 1 tsp green chili, finely chopped
  • 2 tsp soy sauce
  • 2 tsp red chili sauce (Source - Amazon)
  • 2 tsp vinegar(Source - Amazon)
  • 1/2 tsp sugar
  • Salt to taste
  • 2 tsp cornflour(Source - Amazon)
  • water as needed
Recipe
  1.  Heat oil in a pan and fry onion, garlic and ginger for 2 - 3 minutes.
  2. Add in chopped veggies and stir fry till veggies are half cooked.
  3. Add soy sauce, red chili sauce, vinegar, sugar, salt and mix well.
  4. Add enough water and boil till all flavors are absorbed. 
  5. Mix cornflour and water in a bowl.
  6. Pour this cornflour mixture into the veggies pan and cook for another 2 -  3 minutes.
  7. Check the soup consistency. 
  8. Finally, add spring onion, fried noodles, and serve hot and sour soup when it is hot.
