Tri Color Dhokla

On Republic Day Or Independence Day, we usually make sweets of tricolor. Apart from sweets, we can even try Dhokla made using veggies of three colors like spinach and carrot. The recipe is very quick, healthy and tasty as well.

You can say, it is a perfect option for breakfast when you are in a hurry. It can be made with just a handful of ingredients in less time. If you do not have veggies stock at home, you can use food colors to get the tricolors.

So let's see how to make this super simple, delicious tri-color dhokla at home.

Cooking Time: 30 Minutes
Servings : 3 - 4

  • 1 cup Palak leaves
  • 1 cup carrot
  • 1 cup curd
  • 1.5 cup semolina (I bought from Amazon India)
  • 1 tsp green chili + ginger paste
  • 1 1/2 tsp Eno fruit salt
  • Curry leaves
  • Salt to taste
  • 1 tsp mustard seeds
  • 1 tsp white sesame seeds
  • Oil for greasing and seasoning
  • Lemon juice
  1. To make Tricolor Dhokla, we need to prepare 3 separate batters of semolina.
  2. Divide semolina into three parts with equal portions.
  3. Wash spinach thoroughly and put in a mixer grinder with one green chili.
  4. Make a smooth paste.
  5. Mix one part of semolina, palak puree, salt, and 1 tsp lemon juice. Mix well.
  6. Cover and keep aside for 15 - 20 minutes.
  7. Add curd, salt in the second part of semolina batter. Mix well. 
  8. Cover and keep aside for 15 - 20 minutes.
  9. Slice carrots, green chili, salt, and blend them with water to make carrot puree.
  10. Add the carrot paste in 3rd part of semolina. 
  11. Cover and keep aside for 15-20 minutes.
  12.  Now preheat the pan with enough water at the bottom. 
  13. Grease a plate with oil. If you want to put a butter paper on the plate.
  14. First, we will layer the orange part. 
  15. Check the orange semolina mixture, if it's too thick add some water.
  16. Add 1 tsp oil and Eno fruit salt. Mix well. 
  17. Pout the mixture in a greased plate. Let it spread evenly all around the plate.
  18. Lower the heat and put this plate in a preheated pan. 
  19. Cook for 4 - 5 minutes on low flame. 
  20. After the time, take the plate out. 
  21. Now add water in the white semolina part if it's too thick. 
  22. Add oil and Eno fruit salt. Mix well.
  23. Pout this mixture onto green dhokla.Spread evenly.
  24. Cook on low flame for 4 - 5 minutes. 
  25. Take out the plate.
  26. Next, add water in the green semolina part if it's too thick.
  27. Add oil and Eno fruit salt. Mix well.
  28. Pout this mixture onto white dhokla. Spread evenly.
  29. Now cook the entire dhokla for 15-20 minutes on high flame. 
  30. Make sure there is enough water at the bottom of the pan.
  31. Once it is done, take out the plate and let it cool completely.
  32. For Tadka, heat 1 tsp oil in a pan. 
  33. Once the oil is hot, add mustard seeds, curry leaves, and white sesame seeds.
  34. Pour this tadka over the Dhokla. 
  35. Spread coriander leaves and grated coconut.
  36. Serve with tomato ketchup or green chutney.
Note - Add Eno Fruit Salt just before putting the dhokla in the preheated pan. Do not overmix after adding fruit salt.
