Pani Puri, Golgappe

A very popular dish from Mumbai. I am sure everyone of you has tasted pani-puri. I also used to go to eat pani-puri roadside. Once i was thinking, better to make pani puri at home rather than eating the unhygienic roadside pani-puri. So i decided to make it at home. I bought all the ingredients and made spicy pani puri at home. Served to all family members instead of dinner. All are very happy especially my kids on finding some different and more importantly spicy than usual. So i am posting easy steps to make pani-puri at home. Servings: 4-5

Ingredients for Puri:

  • 2 large cups semolina (rava)
  • 1/2 tsp salt
  • 1 tsp ghee

Ingredients for Pani:

  • 6-7 large cups water
  • 2-3 green chillies
  • 2-3 cloves
  • 1 tamarind ball (lemon size)
  • garlic
  • 1/2 cup mint leaves
  • 1 tsp cumin seeds
  • red chili powder
  • jagerry
  • 1/2 tsp lemon juice
  • salt to taste
  • 1 cup sprouts
  • 2-3 potatoes

Recipe to make Puris :

  1. Heat ghee in a pan. Now add melted ghee and salt to semolina. Add little water at a time to make a smooth dough. The stiffness should be same as normal puris.
  2. Cover it with a damp cloth for 30 minutes.
  3. Take out one medium sized ball from the dough.
  4. With the help of semolina, roll out the dough into a round shape roti. With the help of container lid, cut the roti into small puris. pani 
  5. Heat oil in a pan on medium high. And once its hot, remove pan from heat and put puris one by one into pan. Press side of the puri, so that it will puff easily.
  6. Once all puris gets puffed, put the pan again on the gas. 
  7. Flip the puris and fry from another side on low heat till light golden.
Recipe to make Pani:
  1. Mix sprouts, potatoes and turmeric powder and cook well. Keep this aside.
  2. Add some water in tamarind and keep it aside.
  3. Grind green chilies, garlic, mint leaves, pepper, red chili powder and salt to a smooth paste.
  4. Now add tamarind water (without tamarind), blended mixture and jaggery. Mix well.
  5. Put 1/2 tsp lemon juice to this mixture.
How to Serve:
  1. Make a small hole at the center of the puri. 
  2. Fill the puri with potato and sprouts.
  3. Now dip the stuffed puri in the spicy water and serve one by one.

Tip :
If you dont want to invest time in making puris at home, you can simply buy readymade Puri Packets from market. So making pani-puri will not take much of your time.
