Malpua - Indian Style Pancake

Malpua is a special dish normally prepared on holi. Many people think that Malpua recipe is difficult to make. But after reading this preparation method you will surely make Malpua on every occasion. You may use banana, pineapples or even mangoes in malpua. It can also be served with malai.

Servings:  2-3

Ingredients:
  • 1 liter Milk
  • 1/2 Cup Mawa, grated
  • 1/2 Cup all-purpose flour (maida)
  • 2 cup sugar
  • saffron strands
  • 1/2 tsp cardamom powder
  • ghee
  • Pistachios 
Recipe:
  1. Boil milk in a heavy bottom pan till it reduces to 1/3 of its original quantity.
  2. Add mawa and mix well to aviod any lumps. Allow it cool.
  3. Heat a pan with equal quantity of sugar and water. Dissolve saffron strands in milk and add it to sugar syrup. 
  4. Cook the sugar mixture for 8-10 minutes until one-string sugar syrup formed. Add some cardamom powder to it. Sugar syrup is ready.
  5. Now add maida, cardamon powder and 2 tsp sugar to mawa mixture and mix well.
  6. The mawa mixture should be pouring consistency. If not, add some more milk.
  7. Heat ghee in a broad mouthed and less deep pan. 
  8. Pour 1 tsp of batter in the pan into round shape on medium heat. Fry till golden color.
  9. Flip from another side and fry again.
  10. When both sides of malpua are done, take it out of pan and dip it into sugar syrup. 
  11. Malpua is ready to eat. Decorate with chopped pistachios.
