A very popular recipe in Maharashtra. No doubt liked by all. Quick and very easy recipe made up of boiled vegetables. Enjoy this mumbai style pav-bhaji with butter fried pav.

- 4 medium size potatoes
- 1 large onions, chopped
- 1 large capsicum, chopped
- 4 tomatoes, chopped
- 1/4 cauliflower, chopped
- 1/4 cup green peas
- 2 tsp Ginger-garlic paste
- 2 tsp Pav bhaji masala
- Oil
- 3-4 green chilies, chopped
- salt to taste
- 3 tsp butter
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder

- coriander leaves
- lemon pieces
- Pressure cook potatoes, green peas, cauliflower, tomatoes, capsicum with enough water. Mash all the vegetables separately except tomatoes.
- Heat oil in a pan. Now add 3/4 quantity of onions. Fry until golden brown.
- Add chopped green chilies and ginger-garlic paste. Saute for 3 minutes.
- Now add mashed capsicum and cook for 3-4 minutes.
- Add pav bhaji masala, salt, sugar, turmeric power, red chili powder and mix well. Add 2 tomatoes and cook for 5-7 minutes. Press it with the back of the spoon till it gets completely mashed.
- Make puree of remaining 2 tomatoes.
- Now add potatoes, cauliflower, capsicum, peas and tomato puree. Cook on medium heat for 5 -10 minutes stirring continuously.
- Once the gravy will begin to thicken, turn off the heat. Add butter. Garnish with coriander leaves and lemon slices.
- Heat butter in a pan. Slice pav horizontally and fry till crisp and brown.
- Serve hot bhaji with butter fried pav slices.
