Pav Bhaji

A very popular recipe in Maharashtra. No doubt liked by all. Quick and very easy recipe made up of boiled vegetables. Enjoy this mumbai style pav-bhaji with butter fried pav.

Cooking Time: 40- 45 minutes
Servings: 4

Ingredients:
  • 4 medium size potatoes
  • 1 large onions, chopped
  • 1 large capsicum, chopped
  • 4 tomatoes, chopped
  • 1/4 cauliflower, chopped
  • 1/4 cup green peas
  • 2 tsp Ginger-garlic paste
  • 2 tsp Pav bhaji masala
  • Oil
  • 3-4 green chilies, chopped
  • salt to taste
  • 3 tsp butter
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • pav 
  • coriander leaves
  • lemon pieces
Recipe:
  1. Pressure cook potatoes, green peas, cauliflower, tomatoes, capsicum with enough water. Mash all the vegetables separately except tomatoes.
  2. Heat oil in a pan. Now add 3/4 quantity of onions. Fry until golden brown. 
  3. Add chopped green chilies and ginger-garlic paste. Saute for 3 minutes.
  4. Now add mashed capsicum and cook for 3-4 minutes.
  5. Add pav bhaji masala, salt, sugar, turmeric power, red chili powder and mix well. Add 2 tomatoes and cook for 5-7 minutes. Press it with the back of the spoon till it gets completely mashed.
  6. Make puree of remaining 2 tomatoes.
  7. Now add potatoes, cauliflower, capsicum, peas and tomato puree. Cook on medium heat for 5 -10 minutes stirring continuously.
  8. Once the gravy will begin to thicken, turn off the heat. Add butter. Garnish with coriander leaves and lemon slices.
  9. Heat butter in a pan. Slice pav horizontally and fry till crisp and brown. 
  10. Serve hot bhaji with butter fried pav slices.
