Eggless Carrot Cake

Weekend Special Eggless Carrot Cake. A must try recipe by all. Easy to make at home. Delicious, spongy, tasty cake recipe just for you all.

  • 1 cup grated carrots
  • Walnuts, a handful, chopped
  • 1/4 cup brown sugar
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 1/2 cup butter, melted
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon powder
  • 1 1/4 cup all purpose flour
  • 1 1/2 tsp baking soda
  • 1/4 cup milk
  1. Mix vanilla essence, butter, sugar, baking powder, baking soda, cinnamon powder, milk in a big bowl. Beat until well mixed and sugar completely dissolves. 
  2. Fold in carrots, flour and walnuts. Whisk it to form a smooth, flowing battle.
  3. Preheat oven to 325 F. Grease cake tin with butter and some flour. 
  4. Pour the battle in the greased cake tin and smooth the top.
  5. At 170 F, bake the cake for 40-50 minutes.
  6. After 50 minutes, insert a clean needle in the cake to see if the cake is completely baked or not.
  7. Allow to cool the cake for 5-10 minutes before you do frosting.
  8. Decorate the cake with walnuts and dry fruits.
  9. Slice the cake into squares and serve.
