Chocolate Wafers

Cooking Time: 1 hr 30 minutes
  • 1/2 cup unsalted butter
  • 1/2 cup dark brown sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 3/4 cup dutch processed coca powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 2 egg whites
  1. Mix butter, sugars, and vanilla until light and fluffy. Beat in the egg whites, one at a time to make a smooth mixture.
  2. While the mixture is beating, whisk together the flour, coca powder, baking soda and salt in a separate bowl.
  3. Combine dry ingredients to the butter mixture and stir well.
  4. Scrape the dough out onto a piece of plastic wrap. Cover with another piece of wrap and press the dough into a rough disk. Refrigerate for at least 1 hour.
  5. When ready to bake, set the rack at the middle level of the oven. Preheat the oven to 350F.
  6. Use a serrated knife to slice the cookie dough1/8 inch disc. Place the discs in the oven.
  7. Bake for 8-10 minutes, until slightly puffed and firm. Let cool them completely. 
  8. Serve with dessert or ice cream.
